PURPOSE: Provided are a processed fish for using oak charcoal water and a method for producing it, thereby suppressing the growth of bacteria to maintain freshness thereof, giving preservative effects and removing a fishy smell. CONSTITUTION: The method for producing a processed fish comprises the steps of: trimming and washing a fish; adding roasted salts to oak charcoal water(wherein the oak charcoal water is manufactured by washing and boiling oak charcoal in water; drying the oak charcoal; and dipping the oak charcoal into water); dipping the fish into the oak charcoal water added with roasted salts; and taking the fish out and maturing it in a cool room. |
