PROBLEM TO BE SOLVED: To obtain a controlling method and a controller of fluid temperature in which the fluid temperature for controlling the temperature of a temperature controlled section is held stably and extremely closely to a set level at a time point when the fluid is fed to the temperature controlled section (in a tank), and temperature control accuracy at the temperature controlled section can be enhanced remarkably. SOLUTION: In the controlling method of fluid temperature for cooling or heating a temperature controlled section 16 through a heat exchanger 7 in a refrigeration cycle by circulating fluid in a tank 14 through a circulation passage, a temperature sensor 18 is provided in an inflow passage from the heat exchanger to the tank. A temperature regulator 12 is operated by the temperature sensor to repeat overshoot and undershoot for the set temperature of fluid and a micro quantity of heat is mixed into the fluid in the tank, thus settling the fluid temperature in the vicinity of the set temperature. Switching of cooling and heating modes of the heat exchanger is performed by operating the temperature regulator by the temperature sensor.
