Crystallization from sugar syrups is carried out by boiling off water from the syrup in a vacuum pan A4 which is supplied with the syrup through conduits 63 and 57. and the surface of the massecuite in the pan is maintained at an approximately constant level above the top of the heating element F by, continuously or intermittently, withdrawing from the pan some of the massecuite through conduit 48 and conveying it, by means of screw-transporter 49 and conduit 52, into a auxiliary tank B4 from which at least part of the massecuite is returned to the pan A4 through conduit 57. The watervapour given off in the pan passes through chimneys 45 to the cap 46 of the apparatus, which is connected to a condenser and vacuumdevice. The pan A4 and the tank B4 are separated by partition C in the form of a jacket for the circulation of heating-fluid. Air or steam may be passed through the massecuite in tank B4 by means of conduit 43 and nozzles 44. Transporter 49 and conduit 57 are each surrounded by a jacket through which heating or cooling fluid can be passed. Another apparatus described, wherein the auxiliary tank is not within the casing of the vacuum pan. A series of vacuum pans may be employed.
