Each sharpening bar (3, 3) is rigidly secured at its pivot axis (7, 7) to the axle for a weight that weighs the same as or less than the excentral disc(s) (8, 8) connected with the bar. The radius between this point and the excentral axis (7, 7) is less than the radius for the point where the spring contacts the excentral disc in the region of a cross-over point at the inner end of the slot. The device has a base plate (10 with a slot (2) for guiding the blade against spring-loaded, intersecting sharpening bars on either side of the slot. The blade is urged against the bar intersect point. An Independent claim is also included for a second knife sharpening and polishing device, comprising a base plate with a slot for guiding the blade against spring-loaded, intersecting sharpening bars on either side of the slot, where each bar is rigidly secured at its pivot axis to a hub, from which an elastically resilient protrudes so that its free end is in contact with a stop (29, 29) formed by a bolt.
