The invention relates to a composition comprising a fatty phase and a non-null quantity of an organometallic gel obtained by complexing an anionic polymer or a mixture of different anionic polymers with a multivalent metal cation or a mixture of different metal cations. Said composition is preferably in the form of an emulsion, the continuous phase of which is the fatty phase and the dispersed phase is the multivalent metal cation-anionic polymer gel complex. The invention also relates to the method for preparing the emulsion consisting in: preparing an aqueous suspension containing at least one insoluble multivalent cation salt, at least one water-soluble anionic polymer and optionally at least one hydrophilic surfactant; emulsifying the suspension thus prepared, with an oil phase containing optionally one lipophilic surfactant; if necessary, solubilising the insoluble multivalent cation salt by modifying the pH of the emulsion; optionally adding an excess of multivalent cation; and neutralising the final emulsion obtained. The invention also relates to the vaccine containing said composition.
