The invention provides a method of processing meat which comprises trimming a piece of meat (1) to a predetermined weight utilising automatic meat trimming apparatus. The piece of meat (1) is then cut to form a cavity, slot or pocket (3) having a predetermined depth utilising automatic meat cutting apparatus. A predetermined amount of filling material (2) is placed in the cavity, slot or pocket (3) and the cavity, slot or pocket (3) is then sealed. The filling operation may also be automated. Thus the method of the present invention provides a piece of natural meat of predetermined weight and shape making it suitable for mass production. <IMAGE> |
