PURPOSE: A method for producing vinegar using a tangleweed extract is provided, therefore the tangleweed vinegar contains a large quantity of sugar, iodine, potassium and sodium derived from the tangleweed. CONSTITUTION: The method for producing vinegar using a tangleweed extract comprises the steps of: pulverizing dried tangleweed; adding water into the pulverized tangleweed; boiling the mixture for 1 hour and filtering it with a filter paper(Whatman No. 2); regulating sugar content of the mixture to Brix 2.5 to produce a tangleweed solution; adding nutrient components for Acetobacter aceti 32409 into the tangleweed solution and dissolving them; autoclaving the mixture at 121 deg. C for 15 minutes and cooling it; inoculating Acetobacter aceti 32409 into the sterilized tangleweed solution; fermenting the solution at 30 deg. C for 1 week to produce seed vinegar; mixing the tangleweed solution with the seed vinegar in the ratio of 1:1; adding 5% glucose and 6% ethanol into the mixture; and fermenting the mixture at 30 deg. C for 20 days. |
