PURPOSE: A method for producing salt-fermented shrimp using bamboo salt is provided, thereby the salt-fermented shrimp containing healthful components to human can be produced. CONSTITUTION: The method for producing salt-fermented shrimp using bamboo salt comprises the steps of: washing shrimp with fresh water and removing water from the shrimp; adding 20 to 45 wt.% of bamboo salt into a mixture of 55 to 80 wt.% of shrimp and 1 to 2 wt.% of black sugar; sealing the vessel containing the salted shrimp and fermenting it at 5 to 20 deg. C for 3 to 6 months; and heating the fermented shrimp at 65 deg. C or more to inhibit enzyme function, in which the bamboo salt contains minerals such as Na, K, Cl, Ca, Mg, Fe, Mn, P and Zn. |
