PROCESS FOR PRODUCING AN ENZYME FROM A MICROORGANISM CULTURED IN DESTILLERY EFFLUENT

The invention provides a process for producing at least one enzyme. The process includes the steps of providing a distillery effluent; and inoculating the distillery effluent with at least one microorganism strain such as the fungus Trametes versicolor. The process further includes the steps of culturing the microorganism strain in the distillery effluent under conditions conducive to production of biomass and secretion of an enzyme such as laccase; and recovering the laccase. The distillery effluent is generally wine distillery effluent having a minimum phenolic compound concentration of 100mg/l.
