PROBLEM TO BE SOLVED: To simplify constitution, and accurately evaluate characteristics of a liquid including the dispersibility. SOLUTION: In this disclosed ultrasonic liquid-evaluating device 10, a received ultrasonic pulse signal from an ultrasonic sensor 4 is input into an analyzing means 6 through a sensor controller 5, and a dispersion data consisting of four kinds of data comprising (1) initial intensity Ps, (2) a half-value time Th, (3) the number of measurement Np, and (4) an average pulse interval Rt as to each of the received ultrasonic pulse signals before and after stirring the measured liquid is measured based on the received ultrasonic pulse signals, by a micro-processor built in the analyzing means 6, to make the dispersibility of the measured liquid expressed by a numerical value.
