FLAVONOID COMPOUND AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide flavonoid compounds that can develop high antioxidative properties and a method for producing the same. SOLUTION: The objective flavonoid compounds has the chemical structure represented by the following formula, namely so-called 8-hydroxyhesperetin bearing a hydroxyl in the 8-position of hesperetin (8OH-HE). The objective flavonoid compound is prepared by subjecting hesperidin (HE) to the microorganism fermentation treatment with Aspergillus saitoi. The fermentation treatment with the microorganism comprises the mycelia cultivation step where the culture medium including hesperidin and the microorganism is shaken to allow the vegetative mycelia to produce hesperetin and the sporulation step where the objective 8-hydroxyhesperetin is formed as the sporulation from the vegetative mycelia is continuously advanced.
