PROBLEM TO BE SOLVED: To provide a phytosterol-containing water-soluble composition storable over a long period without causing the isolation or precipitation of phytosterol crystal, keeping uniform and stable emulsified, dispersed or solubilized state and having excellent acid resistance, salt resistance and heat-resistance necessary as an additive for foods and drinks. SOLUTION: The composition is composed of (A) a phytosterol, (B) one or more oleophilic emulsifiers selected from glycerol fatty acid esters, organic acid monoglycerides, polyglycerol fatty acid esters, propylene glycol fatty acid esters, polyglycerol condensed ricinoleic acid esters, sorbitan fatty acid esters, sucrose fatty acid esters and lecithins, (C) edible oils, (D) at least one kind of hydrophilic polyglycerol fatty acid ester and (E) water. The HLB value of the emulsifier in the total system is >=12. |
