PROBLEM TO BE SOLVED: To provide a processed boiled rice having industrially high commercial value by solving the problems possessed by the conventional germinated brown rice, and further to provide a method for producing the processed boiled rice. SOLUTION: The germinated rice or a mixture of the germinated brown rice and a polished rice is formed into a processed boiled rice regulated so that the water content is >40% and the processed boiled rice is in a state with hard outside and soft inside. The processed boiled rice is obtained by a method for producing the processed boiled rice by germinating the raw material rice, and continuously subjecting the germinated raw material rice to both of the stopping of the germination, and the steam cooking in the steam.
