Disclosed is a preparation method of the seasoning and aromatic substance, whilst the seasoning substance is obtained by the method, in which the used germinated seeds of edible plants mature under the activity of their endogeneous enzymes, desired fermentation is visualised with the help of at least one micro- organism, the said enzymes and/ or micro-organism are inactivated and all or a part of the matured and/ or fermented sprouts is obtained again, and the use of this seasoning substance as a raw material for preparation of the products of Maillard reaction individually or together with other substances reach in seasoning precursors and/ or flavour enhancers. |
