<p>It is intended to provide an (Aspergillus)-origin aminopeptidase capable of efficiently digesting hardly digestible peptides and a gene encoding this aminopeptidase. An Asperigillus nidulans-origin aminopeptidase and a nucleic acid molecule encoding the same are provided. In particular, a protein having the amino acid sequence consisting of the amino acids at the 1- to 519-positions in SEQ ID NO:2 in Sequence Listing or a protein having an amino acid sequence derived therefrom by substitution, deletion, insertion, addition or inversion of one or more amino acids and having an activity of catalyzing a reaction of releasing an amino acid from the N-terminus of a peptide; and a nucleic acid molecule encoding the same are provided.</p> |
