PROBLEM TO BE SOLVED: To develop and provide a technique which can unlimitedly enhance the value (the range of uses and the merit of cost) of MDM which has an improved quality but has a defect not having a shape, by giving a shape as minced meat. SOLUTION: The method for solidifying the pasty meat is characterized by adding a transglutaminase and animal protein and/or vegetable protein to the pasty meat, heating the mixture to accelerate a gelling reaction, simultaneously stirring the mixture, and thus simultaneously advancing the formation and breakage of the gel to solidify the mixture into the minced meat-like product. |
