The device for the regulating of the combustion ratio of an air and gas mixture supplied to the burner of a gas oven includes an air feed pipe (5) which can be shut off by a sensitive valve with a membrane. Means are provided which limit the opening of the valve if the gas pressure falls below a determined set valve so that the feed of air volume remains constant below an established gas quantity value. The means for limiting the valve opening are means by which the deformation of the membrane towards the gas chamber is limited.
