SUBSTANCE: proofer-oven unit has dough divider, cam mounted on dough divider shaft, pan oiling device made in the form of casing equipped with nozzles, vessel, pump provided with cylinder and spring-loaded piston and connected through kinematic link to cam, pump pressure regulating mechanism mounted on piston and engageable with its spring, and oiling liquid flow rate regulating mechanism. Kinematic link is made in the form of double-armed lever, whose one arm is connected to cam and other arm is connected to piston through tie-rods joined by oiling liquid flow rate regulating mechanism. Axes of nozzles are arranged at an angle with respect to vertical plane and are extending in opposite directions. EFFECT: reduced consumption of oiling liquid and improved quality of oiling baking pans. 1 dwg
