Compositions (I) comprising a vegetable extract rich in superoxide dismutase coated or microencapsulated with a liposoluble fatty material, are new. Compositions (I) comprising a vegetable extract rich in superoxide dismutase which is a proteic extract of Cucumis melo, especially in powder form, coated or microencapsulated with a liposoluble fatty material, are new.
