An apparatus (20) for processing meat including a frame (22) and a driving mechanism (24) attached to the frame. A carriage (34) is attached to the driving mechanism and is movable along a path. The carriage (34) is adapted to support the meat. A cutting head (28) is disposed along the path to cut the meat into at least two pieces of meat when the driving mechanism forces the meat through the cutting head.
