<p>The invention relates to a machine for tenderising meat morsels comprising (i) a bed (12) that supports a longitudinal support platform (1) which is provided with means for intermittently advancing the meat morsels along said platform, (ii) at least one tenderising unit (6) which is provided with blades (7) that can be moved vertically in order to cut the meat morsels on said platform (1), and (iii) at least one crushing unit (4) which is provided with a presser plate (5) that can be moved vertically in order to pound the meat morsels on top of said platform (1). Said intermittent advance movement means, crushing unit (4) and tenderising unit (6) are connected to independent drive means (19, 10a, 10b), which are controlled independently and in a co-ordinated manner such that the blades (7) and the presser plate (5) come into operation when the meat morsels come to a halt and, when the meat morsels are moving forward, said blades and plate are held back.</p> |
