摘要 PROBLEM TO BE SOLVED: To provide a method for freezing, method for thawing, freezing device and thawing device capable of making ice crystals as fine and the progressing state of freezing as uniform, suppressing the mechanical destruction of cellular tissues, chemical change of cellular colloidal tissues, etc., and capable of highly preventing the deterioration of the quality of fresh foods such as taste, nutrition, etc. SOLUTION: This method for freezing is provided by covering or adding a freez-protecting substance consisting of a dielectric substance on the surface or at the inside of a material to be frozen such as the fresh foods, irradiating an electromagnetic wave to the material to be frozen, and freezing it with a larger energy than that absorbed by the above material to be frozen caused by the above electromagnetic wave irradiation. As the electromagnetic wave, a specific frequency by which the specific dielectric loss ratios of the freez- protecting substance solution and the coagulated material agree approximately, or the specific dielectric loss ratio of the coagulated material is larger than that of the above solution. The thawing is performed by using the electromagnetic wave of the above specific frequency.
