摘要 PROBLEM TO BE SOLVED: To provide a malt alcoholic beverage that has a sufficiently high concentration of oligosaccharide and new types of taste and flavor and a method of producing the same that can readily and surely give the objective beverage. SOLUTION: The objective method of producing malt alcohol beverage characteristically comprises the following steps: (1) the malting step where a β-amylase activity-defective barley is malted; (2) the preparation step wherein the malt is saccharized to the wort; and (3) the fermentation step wherein the yeast is added to the wort to effect fermentation thereby producing the objective malt alcoholic beverage including oligosaccharides.
