<p>PROBLEM TO BE SOLVED: To provide a method for producing a processed and frozen product retaining tastiness of the season of just collected green soybeans. SOLUTION: This method for producing the frozen product of the green soybeans subjected to blanching treatment is characterized by having a blanching treatment step composed of a color developing step and a swelling step of the green soybeans and a salt water dipping treatment step. The color developing step is carried out by hot-water treatment and the swelling step is performed by steaming. The blanching treatment step is conducted by movement of the soybeans in a cylindrical body. Furthermore, the blanching treatment is carried out in a blanching treatment device composed of the cylindrical body having at least a color developing zone and a swelling zone, a means for supplying steam into the cylindrical body and a means for moving the green soybeans in the cylindrical body.</p> |
