PROBLEM TO BE SOLVED: To provide a convection oven, capable of controlling the flow of hot air easily and preventing the generation of variability in baking. SOLUTION: A motor 10, a fan 11 and a heater 12 for producing hot air and sending the same into a baking chamber are provided in the upper part of the baking chamber 14 whose hot air passages 15, 15 are provided at both sides thereof and air discharging ports 23 are opened along the lower side of rails 16, fixed to both side wall surfaces of the baking chamber 14 with a given interval to withdraw or insert ceiling plates 17, while a regulating mechanism for controlling the discharging amount of hot air is provided on the air discharging port 23 and a hot air passage 19 is provided between the deep wall surface 18 of the baking chamber 14 and the ceiling plates 17, further, a suction port 21 is opened on the ceiling of the baking chamber 14.
