PROBLEM TO BE SOLVED: To provide a method for efficiently producing a delicious soup within a short time by extracting palatable ingredients from an animal raw material without requiring special equipments. SOLUTION: This soup is produced by enzymatically hydrolyzing the animal raw material with an enzyme such as protease which is a proteolytic enzyme, then deactivating the enzyme with heating under a normal pressure or a pressurized state and carrying out hot water extraction to extract the palatable ingredients included in the raw material.
