PROBLEM TO BE SOLVED: To provide a method for Yacon (Asteraceae plant originating in South America)processing, with Yacon is processed without decomposing contained nutrients and preserved in a stable state for a long period of time. SOLUTION: This method for Yacon processing comprises a process for freezing Yacon at -20 to 0 deg.C, a process for arranging the frozen Yacon in an atmosphere at 5.0-0.001 Torr (667-0.133 Pa) degree of vacuum at -70 to 0 deg.C and drying the frozen Yacon and a process for arranging the dried Yacon in an atmosphere at 5.0-0.001 Torr (667-0.133 Pa)degree of vacuum at 1-80 deg.C and further drying the dried Yacon and processes Yacon without a change in quality of Yacon. |
