摘要 <p>A syrup of sugar is passed through a pipe of closed cross-section and between entry to and exit from the pipe it is subjected to the action of heat in a heating zone and a caramel forming temperature; thereafter it passes through a cooling zone at a temperature corresponding to water vapour pressure lower than the ambient pressure at the point of exit from the pipe.</p>
