摘要 PROBLEM TO BE SOLVED: To obtain yogurt for strongly health-oriented modern people by subjecting to lactic fermentation only a vegetable raw material instead of an animal raw material such as cow milk. SOLUTION: This yogurt is obtained by subjecting to lactic fermentation only a vegetable raw material as soybean milk; wherein if lactic acid bacterium to be used for subjecting cow milk to lactic fermentation is used, yogurt can be made through subjecting soybean milk to lactic fermentation in the condition of temperature and pressure almost the same as that of cow milk.
