PURPOSE: Provided is a process of producing eggs using new fermented feed obtained by mixing red ginseng by-products with rice bran and a microorganism composite preparation, fermenting and then mixing quartz porphyry powder. Whereby, the eggs are high in freshness, palatability and stability. CONSTITUTION: A red ginseng by-product and rice bran are subjected to preliminary fermentation at 60deg.C for 24hr and then sterilization. The preliminary ferments are mixed with 0.1 to 0.2% by weight of a microorganism composite preparation of S. cerevisiae KCTC1028 yeast strains, L. acidophilus KCTC3199 lactic acid bacteria producing strains, B. subtilis KCTC1028 strains, A. oryzae KCTC6983 fungus strains and then fermented at 40deg.C for 12hr. Thereafter, the ferment is dried with hot air and added with quartz porphyry powder in a weight ratio of 50:50 and 15 to 30g fermented feed is fed four times per day to chickens of about 140 days after hatch and raised without the injection of antibiotics.
