EQUIPMENT AND METHOD FOR MAKING FOOD PARTICLES FROM FOODMASS

An assembly (1) converts a chocolate mass into particle (27b) form. The assembly has a heater (2) and melts the chocolate in a form with a droplet discharge jet (19a) located in the vicinity of a cooling unit (20). The cooling unit (20) has especially a movable cooled contact surface (20a). The cooled contact surface is a rotating roller with a scraper panel (28) which lifts solidified chocolate particles (27b) from the surface (20a). The jet is essentially vertically overhead the contact surface, from which it is separated by an adjustable distance (B). The cooling system employs a gaseous coolant. An Independent claim is also claimed for a process to make chocolate particles from a molten mass.
