PROBLEM TO BE SOLVED: To provide a method for processing a seasoned fish meat food aiming at the use for the fish food as a daily dish stuffed in a lunch box or a rice ball, or a tidbit, without having a collapsed meat and having softened small bones giving only a low degree of an incompatible feeling in the case of putting the same in a mouth. SOLUTION: This method for processing a fish meat is to immerse a fish meat material having bones and cut by a prescribed size into a blended solution prepared by adding a modified and sugar added egg yolk and seasoning to an alkali ion water of 10-100 fold dilution for 10-40hr, then heating the fish meat material and the blended solution in a pressurized vessel with a strong fire, heat-treating with a slow fire when the pressure attains >=1.0kg/cm<2> , and after returning to a room temperature heat-treating the obtained material again with an edible oil at 150-200 deg.C for a short period of time. |
