摘要 <p>Continuous sterilisation and chemical purification of pickling brine used in food prepn. esp. cheese, by heating the brine after addition of 5 g/l seed crystals consisting of microcrystals of CaCO3 and -SO4 of dia. 75 mu. Contaminants including bacteria are pptd. and filtered off. Process removes harmful salts derived from cheese without having to purge the brine which is bacteria free after treatment.</p>
