PROBLEM TO BE SOLVED: To provide a bulbous vegetable preparation machine that efficiently cut and remove the stems and/or roots of bulbous vegetables, leaves the stems and/or roots of uniform length on the bulbs as a commodity, and thus enables the bulbs to be processed into a product favorable in terms of transportation and commodity appearance. SOLUTION: This bulbous vegetable preparation machine, which functions to cut and remove the stems and/or roots of bulbous vegetables, includes each at least one set of bulb side conveyors functioning to hold the boundary site between the stems or roots and the bulbs and convey the vegetables, end side conveyors standing against the above conveyors and functioning to grip the end side of the stems or roots and convey the vegetables and excising cutters between both kinds of the conveyors, and allows for increasing the distance between both kinds of the conveyors during conveyance; wherein it is optional that one or both kinds of the conveyors are discs, a conveyance is made as the discs rotate, and the distance between both kinds of the conveyors is increased by setting up the direction of the rotating axis of each of the bulb side disks and that of each of the end side disks at a given angle with each other.
