The method for production of a vegetable. protein hydrolyzate comprises the use of vegetable protein concentrate or isolate as starting materials and a combination of a non-pH-stat hydrolysis to a hig h degree of hydrolysis followed by ultrafiltration. The method provides a vegetable protein hydrolyzate with good organoleptic properties which can be produced with relatively high yield. The vegetable protein hydrolyzate thus produced is used as a nutrient .
