PURPOSE: A process of preparing a pig's trotters meat product(jokbal, Korean native name) is provided by boiling pig's feet with Hovenia dulcis var. koreana Nakai as a main material and Chinese herbal medicine such as Zizyphus jujuba, Glycyrrhizae Radix or the like. Whereby, the product has excellent taste, flavor and nutrients. CONSTITUTION: Pig's feet is soaked in water for 3 to 4hr to remove blood therefrom and then heated with Hovenia dulcis var. koreana Nakai as a main material and materials selected from the group consisting of salt, onion, garlic, starch sugar, Zizyphus jujuba, Glycyrrhizae Radix, Cinnamomum japonicum Sieb and the like. |
