PURPOSE: A low temperature compression type deep cooling apparatus is provided to improve the quality of live fish. CONSTITUTION: In the deep cooling apparatus for improving the quality of live fish, a certain low temperature cooled solution is injected into an elastic bag, and this elastic bag is interposed between an upper plate and a lower plate, together with the live fish. At this condition, the live fish are compressed by pushing the upper plate downward so that the life fish die between the upper and lower plates with being contact with the cooled elastic bag, thereby the muscle of the fish is able to be rapidly contracted and hardened.
