PROBLEM TO BE SOLVED: To provide an apparatus for producing a tofu (bean curd) having improved mixing efficiency of hot soya milk with an emulsified coagulant, giving a tofu having excellent qualities such as palatability, taste, fineness of texture, hardness and shape-retention in highly hygienic state and high productivity, enabling the use of various coagulants such as bittern and clarifying powder (calcium sulfate) as well as an emulsified coagulant and having high versatility. SOLUTION: The apparatus is provided with a pump 5 for supplying soya milk as a feed liquid and a coagulant and a mixing means having an inlet and an outlet and performing the division of the feed liquid supplied by the pump 5, the collision of the feed liquid streams and the collision of the liquid against the wall face. |
