摘要 PURPOSE: Provided are a continuous sterilizing and drying method for raw red pepper and an apparatus therefor, thereby mass-producing high quality of dried red pepper having improved preservability and storageability. CONSTITUTION: The continuous sterilizing and drying method of raw red pepper comprises the steps of: selecting red pepper and followed by removing its stalk and fermenting it; washing its surface to remove impurities and remaining agricultural chemicals; finely cutting the washed red pepper then removing seeds therefrom; sterilizing it with steam; primarily and secondarily drying the sterilized red pepper; and pulverizing and forming the dried red pepper.
