Pastry such as pretzels, rolls or crescents which are to be coated with a saltry or sugary soln. is exposed on a grid to the action of a soln. which is sprayed out of nozzles. Cf. the dipping method of applying a soln. the new method reduces the consumption of soln. The dough absorbs less and a lesser quantity does not contaminate and clog the oven. The throughput is increased and the application time is reduced.
