<p>PROBLEM TO BE SOLVED: To provide a method for producing sterol fatty acid esters, obtained from a deodorized scum oil by a synthesizing reaction using an enzyme in supercritical carbon dioxide, by which the sterol fatty acid esters having an excellent quality can be produced at a low cost. SOLUTION: This method for producing the sterol fatty acid esters comprises using as a raw material a deodorizing scum oil produced as a volatile component-containing distillation fraction in a deodorizing process as one of processes for purifying vegetable oils or fats, subjecting the deodorized scum oil to a sterol fatty acid ester-synthesizing reaction using an enzyme in supercritical carbon dioxide, and then selectively recovering the product from the reactor, thereby producing the sterol fatty acid esters having an excellent quality at a low cost.</p> |
