Process to prepare mussels for human consumption in sealed plastic bag with sauce or dressing, conveys presentational impression of freshness. . Following a first washing stage, fresh living mussels are again washed and are then placed loosely in a plastic bag with a sauce, dressing and/or other ingredients. The bag is evacuated, receives an inert gas charge and is then sealed. The bag and contents are then heated in agitated water and pasteurized allowing the mussels to open at least in part, before the bag and contents are cooled.
