摘要 PURPOSE: A process of preparing red pepper paste is provided by mixing a mixture liquid of snow-melted water, loess water and bamboo salt, fermented soybean paste fermented on dried horse manure, red pepper powder, crude drug extracts, malt powder, oat powder and the like and then aging. Whereby, the red pepper paste has a good taste and anticancer function. CONSTITUTION: Snow fallen on the winter solstice is melted and mixed with loess water and bamboo salt to give a mixture liquid having a salinity of 2%, which is heated with Phellinus linteus, Agaricus Blazei, Astragali radix and Glycyrrhizae Radix for 72hr to give a concentrate. Steamed soybeans are fermented on dried horse manure that is came from a horse having fed soybean, bean chaff, beanstalk and rice straw to give fermented soybean fermented with horse manure. The concentrate and fermented soybean are aged for 30 to 45 days, the aged fermented soybean power is ground, mixed with malt powder, red pepper powder, glutinous rice powder, starch sugar, bamboo salt and then aged for 6 months or more.
