TRANSFORMED LACTIC BACTERIUM STRAIN CONTAINING CHOLESTEROL OXIDASE GENE AND PROCESSED DAIRY PRODUCTS USING THE SAME

摘要

PURPOSE: Provided are a transformed lactic bacterium strain containing cholesterol oxidase gene to have excellent decomposability and fermentability and processed dairy products having low cholesterol by using it. CONSTITUTION: Lactobacillus lactic MG1363/pMG-choA(KCTC 180700P) is obtained by transforming with lactobacillus sp. strain with a recombinant plasmid pMG36e-ChoA containing cholesterol oxidase coding gene originated from Streptomyces sp. It can be used as a starter in manufacturing processed dairy products, such as fermented milk, butter cheese and the like, decomposing cholesterol.
