Production of starch products with a high resistant starch (RS) content comprises: (a) subjecting native legume starch to enzymatic debranching in aqueous suspension; (b) washing the resulting intermediate product to remove salts, enzymes and oligosaccharides; (c) subjecting the washed product to retrogradation; and (d) optionally drying the product.
