<p>A method of efficiently synthesizing an α-ketol unsaturated fatty acid having a double bond at the β-position of the ketone moiety. The method is characterized by reacting a mono-substituted acetylene (2) with an epoxy compound (3) to synthesize a compound (4) and synthesizing an α-ketol unsaturated fatty acid (1) from the compound (4), as shown in the reaction formula (1).
