A method of making an individual fish portion, comprising placing in a mould cavity at least one piece of unfrozen fish loin (2) or fish middle (3,4) and at least one piece of unfrozen fish selected from fish loin pieces (2), fish middle pieces (3,4), fish tail pieces (5) and fish nape pieces (6) , and subjecting the filled mould (13) to a temperature of not more than -8{C to freeze the fish pieces therein, and removing the frozen fish portion from the mould cavity (7). |
