PROBLEM TO BE SOLVED: To uniformly heat the whole by preventing formation of partial over heating and partial shortage of heating in an apparatus for continuously heating a fluid food material by continuously passing the fluid food material between two or more electrodes for electric heating, arranged on a pipe line in the length direction thereof at an interval while continuously fluidizing and transporting the fluid food material in the pipeline, and further to prevent a stirring member for the uniform heating from affecting the electric heating. SOLUTION: This apparatus for continuously and electrically heating the fluid food material is characterized in that a plurality of electrode groups each composed of two or more electrodes for electric heating are arranged in the length direction of the pipeline at the interval so that the fluid food material may not be energized at the position between the mutual plurality of electrode groups, and the stirring member for stirring the fluid food material in the pipe line by moving the fluid food material in the direction different from the axis of the pipeline is installed in the position between the mutual plurality of electrode groups in the pipeline. |
