PROBLEM TO BE SOLVED: To provide a method for treating the surface of hulled rice or the like, by which a protecting layer having strong abrasion resistance and oxidation resistance is formed on the surface of the polished rice or grain in a micron- order thickness and simultaneously integrated with particulate starch adhered to the surface. SOLUTION: This method for treating the surface of the hulled rice or the like is characterized by applying high humidity hot air to the grain to heat the surface portion, thus gelatinizing starch in the portion, followed by cooling the gelatinized starch to form the dense layer of the gelatinized starch. |
