PROBLEM TO BE SOLVED: To provide a method by which reductive actions of Bincho-zumi (good- quality charcoal produced from an ilex in Wakayama Prefecture, Japan) can be utilized in methods for cooking other than a method for cooking of frying or baking. SOLUTION: This method for cooking comprises heating the Bincho-zumi to a temperature for releasing organic substances and boiling or steaming a food material together with the heated Bincho-zumi. Furthermore, the Bincho- zumi is housed in a bag having air permeability and heat resistance for preventing the release of broken charcoal to prevent the mixing of the broken charcoal in the food material. The cooking water is obtained by heating the Bincho-zumi at the temperature for releasing the organic compounds, placing the Bincho-zumi in water and including the organic compounds released from the Bincho-zumi in the water. The method for producing the cooking water is provided. |
